Ingredients:

- 3 pork nails
- 50 dkg pork skin
- 1 head of garlic

Put the smoked pork shoulder, cleaned nails and pork rind in a pot and add enough water to cover. Once boiling, remove the foam and add the garlic cloves, onion and black pepper, then salt. Simmer for at least 2-3 hours until the fleshy-skiny part of the fingernail has separated from the bone. Remove the smoked pork loin after 1 hour. When cooked, let it rest for about 10 minutes and then remove the fat from the top. Then place a paper towel on top for a few seconds to absorb any remaining fat. This can be repeated several times as needed. To taste, place the boned nails, skins and pork loin in a bowl and pour over the strained jelly.
